Leipzig resident Sebastian Ricker invented beer using birch sap, newspaper Bild am Sonntag reported.
According to his information, the 32-year-old German has been working on new ideas for a sparkling drink for many years. This spring he found himself in a forest in Saxony and collected 130 liters of birch sap, which became the main ingredient for his beer. Riker named the new variety Birkenzauber (“Birch Magic“).
600 liters of beer are created using champagne yeast, hops and malt. Its alcohol content is 6.5%.
The drink is expected to go on sale in mid-April. “Its taste is slightly sweet, with notes of gooseberry, grape and citrus fruits. “Ideal aperitif during asparagus season,” noted the brewer.
